One of the obstacles to going 100% raw, for me, anyway, has been coming up with delicious raw supper ideas that don’t take a long time to prepare, and that feel like a real meal (deprivation doesn’t suit me). I saw an article on raw stuffed peppers earlier today, and thought “yes, that would definitely feel like a real meal!”. So, I’ve scoured the web looking for great recipes for stuffed peppers – enjoy!

But I had to get seriously creative after I subtracted the cheese, sour cream, pork, and beef – whew!
