One of the obstacles to going 100% raw, for me, anyway, has been coming up with delicious raw supper ideas that don’t take a long time to prepare, and that feel like a real meal (deprivation doesn’t suit me). I saw an article on raw stuffed peppers earlier today, and thought “yes, that would definitely feel like a real meal!”. Normally this might be a tasty appetizer but these days if we do anything remotely involved we make a meal out of it. I don’t think the presentation and the picture do them justice because they really were fabulous. Here’s what we did; the filling is adapted from the Garden Pate in Ani’s Raw Food Kitchen.

This was another fun recipe experiment. As I was surfing Facebook half awake this morning, I saw a few flaming posts on Paula Deen coming out about her Type 2 diabetes diagnosis 3 years ago. I decided her announcement was the perfect excuse to raw vegan-ize one of her recipes in an attempt to make a comfort recipe much healthier. I finally decided on her Stuffed Red Peppers. But I had to get seriously creative after I subtracted the cheese, sour cream, pork, and beef – whew!
