If you’ve been raw for a while, have just gone raw, or are thinking about trying raw, a dehydrator is one amazing raw food tool that can make it SO MUCH easier to be raw without feeling deprived, or being unhappy about having to limit what you eat when others around you seem to be having so much fun eating whatever they feel like. Dehydrators do, without a doubt, require that you plan ahead, but the actual preparation time can be remarkably little, and the results can transform something like a simple raw salad into a gourmet masterpiece.

I love to make Raw Carrot Cake because the taste takes me right back to my childhood since carrot cake was a big treat in our household. (My husband has been loving these ones – we make a big batch, and dehydrate half, but serve the other ones as raw carrot cake muffins – they’re great both ways! Good way to use carrot pulp from juicing. And – don’t forget to use her raw-carrot-cake icing recipe!!!)
